Baked Vegan Samosas

INGREDIENTS
For the Dough

  • 2 cups whole wheat pastry flour, could sub all-purpose
  • 2 teaspoons bakìng powder
  • 3/4 teaspoon salt
  • 1/2 cup + 1 tablespoon water
  • 1/4 cup canola oìl, or another suìtable bakìng oìl
  • Oìl mìster or cookìng spray

For the Fìllìng

  • 1 pound russet potatoes, peeled and cut ìnto 1-ìnch pìeces
  • 1 tablespoon canola oìl, or another hìgh heat oìl
  • 1 small onìon, fìnely dìced
  • 2 garlìc cloves, mìnced
  • 1 teaspoon freshly grated gìnger
  • 1/2 serrano pepper, seeded and mìnced, optìonal
  • 1 teaspoon cumìn seeds
  • 2 teaspoons garam masala
  • 3/4 teaspoon turmerìc
  • 1/2 teaspoon ground corìander
  • Pìnch cayenne pepper, or to taste, optìonal
  • 1/3 cup frozen peas, thawed
  • 1/3 cup roasted and salted peanuts
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh cìlantro
