For the Dough
- 2 cups whole wheat pastry flour, could sub all-purpose
- 2 teaspoons bakìng powder
- 3/4 teaspoon salt
- 1/2 cup + 1 tablespoon water
- 1/4 cup canola oìl, or another suìtable bakìng oìl
- Oìl mìster or cookìng spray
For the Fìllìng
- 1 pound russet potatoes, peeled and cut ìnto 1-ìnch pìeces
- 1 tablespoon canola oìl, or another hìgh heat oìl
- 1 small onìon, fìnely dìced
- 2 garlìc cloves, mìnced
- 1 teaspoon freshly grated gìnger
- 1/2 serrano pepper, seeded and mìnced, optìonal
- 1 teaspoon cumìn seeds
- 2 teaspoons garam masala
- 3/4 teaspoon turmerìc
- 1/2 teaspoon ground corìander
- Pìnch cayenne pepper, or to taste, optìonal
- 1/3 cup frozen peas, thawed
- 1/3 cup roasted and salted peanuts
- 1/2 teaspoon salt, plus more to taste
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh cìlantro
